Carol adopted another ghoul named Gob, whom the player meets very early on in the game. They’ve run this hotel together for over 60 years and are heavily implied to be a couple. Carol rents out the rooms and Greta serves the food. Carol and Greta are two ghouls who run a hotel called Carol’s Place in the Underworld.
